Chopped Spring Salad


4 cups romaine, chopped

1 bell pepper, diced small

1 tomato, diced small

1 carrot, diced small

1/2 zucchini, diced small

1 cup broccoli, diced small

2 tablespoons red onion, diced small

1/2 cup berries

2 tablespoons pecans

2 tablespoons olive oil

2 teaspoons honey

4 tablespoons flavored vinegar

Black pepper to taste

Dash dried oregano

Directions: Toss all ingredients together in a large mixing bowl. Serve immediately or chill up to 1 hour before serving.

Chef’s tip: Protein such as chicken, shrimp, bacon or tofu can be added to this salad.

Nutrition: Serves 4. Per serving (1 1/2 cups): 161 calories, 3g protein, 12g carbohydrate, 3g fiber, 12g fat, 23mg sodium.
